The shashlick is very popular in the north and northwest of China, mostly living by Muslim people. Many vendors are seen making them at street corners, especially in the cities and towns of the Xinjing Uygur Autonomous Region.
It firstly is made of the mutton sliced into pieces. When the mutton slices were stringed together by a small iron-stick, they will be grilled over a charcoal fire. When it is roasted for a few minutes, it will be scattered some seasoning like salt, chilli, and aniseed powers, ect. With the mutton oozing out juice, the shashlick is ready to be eaten.
This kind of food has many names and spellings in English, including kabob, habab, kebab, kebob and cabob, besides shashlick.
